Rest?

This week I am staying at my parent's house in Illinois. My dad is out in West Virginia for 6 weeks. While he is gone my older sister has been staying with my mom. My mom has had her share of health issues and needs occasional assistance. Since Dan and my oldest are in the Dominican Republic, I offered to come down so my sister could take her girls to Chicago and Michigan to visit more of our family.

I decided that this was going to be a week of rest. Although, I am still a mom, so we will see! It is nice to be away from home and the list of never ending chores and projects. Since I have less to do, I decided to focus this week on healthy eating. I have been struggling with food and exercise since my youngest was born. He's 5, I have no excuses! In January, I read a great book called Reshaping It All: Motivation for Spiritual and Physical Fitness. This book has so many helpful hints about healthy eating. Although, it really boils down to discipline and allowing God to help you. In May, I started to follow the Reshaping It All website. Unfortunately, I did not stick with it! Thankfully, the website is up and accessible anytime. I plan to read the book and website again this fall.

At home, I find myself busy and often stressed. I struggle with making healthy choices. After arriving last night, I decided my grocery run today was going to be healthy! I also decided to journal what I am eating this week. If I do a good job then my reward will be ice cream on Friday! We have an amazing local ice cream here in my hometown. It is SO good, I even served it at my wedding reception!

Here is what I ate today:

Breakfast:
2 scrambled eggs with cheese
coffee with cream and no sugar

Lunch:
cheese stick
handful of pistachios
lots of raw carrots

Mid-day:
coffee with cream and no sugar

Dinner:
HUGE salad with lots of veggies
instead of dressing I mashed up 1/2 an avocado - it worked great!

Evening:
yogurt

I decided to blog this for more accountability! So keep me accountable :)

  1. wow, you are brave to blog this. maybe that is what I should do. i need some serious accountability. - so you are gone this week. bummer. We are headed to our little "Vacation home" (LOL) on thursday. The kids and I will stay at the house til sunday and jas will be sleeping at our old church with our teens. they are going on a 3 day missions trip. - bummer that i won't see you. - enjoy your week of rest.
